Sweet Potato Fries

Favourite of kids and adults alike, one large sweet potato is a great and easy dinner option.

Ingredients

  • 1 or 2 sweet potatoes, unpeeled but washed thoroughly
  • 2 tbsp olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • (optional) 1 teaspoon of your spice of choice: ras-el-hanout, cinnamon-cumin-cayenne, etc.

Method

Preheat the oven to 250°C (450°F).

Prepare a baking tray with a baking sheet.

Thoroughly scrub the potatoes, removing any sprouts or impurities.

Cut them up into long sticks of about 1/4 inch thickness.

In a pot, mix olive oil, salt, pepper and spices, if using.

Swoosh the potato sticks in the oil mixture until well coated.

Spread the potatoes evenly on the baking sheet. Do not crowd them too much. If you have more than one tray, it’s best to do them in batches.

Bake for about 15 minutes. Check for doneness. If still raw, continue baking in increments of 10 minutes, checking for doneness each time.

When nice and sweet, take them out and leave on the tray for 5 minutes, for extra crispiness. Adjust salt and pepper to your liking.

Serve with ketchup, mayo, tzaziki, or any other dip of your choosing.
