CousCous Salad with Hazelnuts

Crunchy, sweet and juicy, it’s a perfect cold meal for a summer picnic.

Ingredients

  • 2 cups prepared cous cous or bulgur, chilled
  • 1 red onion, minced
  • 2 small persian cucumbers, chopped
  • 1/2 cup hazelnuts, lightly ground or smashed
  • 1/2 cup parsley, chopped
  • 100g or 1/2 pack feta, crumbled (omit for vegan version)
  • 1/2 cup olive oil
  • 1 tbps lemon juice
  • Salt
  • Pepper

Method

Mix all solid ingredients in a bowl.

Add olive oil, lemon juice, salt and pepper to taste.

Mix everything well and adjust the seasoning to taste.

Keeps for three days in the fridge.
