Crunchy, sweet and juicy, it’s a perfect cold meal for a summer picnic.
Ingredients
- 2 cups prepared cous cous or bulgur, chilled
- 1 red onion, minced
- 2 small persian cucumbers, chopped
- 1/2 cup hazelnuts, lightly ground or smashed
- 1/2 cup parsley, chopped
- 100g or 1/2 pack feta, crumbled (omit for vegan version)
- 1/2 cup olive oil
- 1 tbps lemon juice
- Salt
- Pepper
Method
Mix all solid ingredients in a bowl.
Add olive oil, lemon juice, salt and pepper to taste.
Mix everything well and adjust the seasoning to taste.
Keeps for three days in the fridge.
