Bulgur

Not a very well-known side, but it’s great as a side for any middle-eastern themed meal or bowl. It works in any recipe where couscous or brown rice would work.

Ingredients

  • 1 cup bulgur
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 tsp salt

Method

Rinse the bulgur.

Place in a pot with water and salt, cover and cook on high until the water boils.

Turn off the heat, keep it on the stove and covered, and let the residual heat cook it through, about 10 minutes.*

Uncover, add olive oil and fluff with a fork. Correct the seasoning if necessary.

*Notes

  • It can take longer than 10 minutes, if it still has liquid after 10 minutes, carefully evaporate it on low heat with the lid uncovered.

Make it a meal

  • Crumble some feta and add a few slices of cucumbers and/or tomatoes on top to fashion it into a quick salad.
